גְלוּטֵן (Gluten; בעברית דִּבְקָן) הוא חלבון המצוי בעיקר בדגנים, כחיטה, שעורה, שיפון וכוסמין. ייחודו של הגלוטן הוא היותו בלתי מסיס במים - תכונה המקנה לו את היכולת ליצור לחם. גלוטן הוא חלבון התשמורת העיקרי בגרגר החיטה, ורכיבי הגלוטן השונים מהווים כ-90% מהחלבון בגרגיר החיטה.
