אספרטם

אספרטם הוא שמו של ממתיק מלאכותי, המבוסס על האסטר המתילי של דו-פפטיד המורכב מחומצה אספרטית ופנילאלנין. אספרטם מתוק מסוכר פי 180 בערך. הוא משמש כתחליף לסוכר במאכלים ובמשקאות מסחריים רבים ברחבי העולם, בעיקר במשקאות דיאטטיים, כתוסף מזון מסומן כ-E951. אספרטם הוא מולקולה כיראלית ורק אננטיומר אחד הוא הממתיק, בעוד שלאננטיומר השני יש טעם מר.

בעיכול, האספרטם יתפרק לחומצות האמינו המרכיבות אותו ומתנול. האספרטם אינו מתאים לאפיה ממושכת משום שהוא עשוי להתפרק בתגובת הידרוליזה ולאבד ממתיקותו. מידת הפירוק עולה עם הטמפרטורה, משך האפיה והpH של המזון (האספרטם יציב בערכי pH 3-4 יותר מבסביבה בסיסית יותר‏‏) בחימום ל-196°C אספרטם מאבד מתנול והופך ל 2,5-diketopiperazine.

Aspartame
Aspartame (APM; or ) is an artificial, non-saccharide sweetener used as a sugar substitute in some foods and beverages. In the European Union, it is codified as E951. Aspartame is a methyl ester of the aspartic acid/phenylalanine dipeptide. It was first sold under the brand name NutraSweet. It was first synthesized in 1965, and the patent expired in 1992.
