אגר (Agar; מהשם המלא במלאית: Agar-Agar) הוא סוכר המופק מאצות. האגר מופק מדופן התא של שתי אצות: המין Sphaerococcus Euchema והסוג Gelidium. אגר שימש לאורך ההיסטוריה כמרכיב בהכנת קינוחים, ולמעלה ממאה שנים הוא גם החומר העיקרי המשמש במיקרוביולוגיה להכנת מצעי גידול למיקרואורגניזמים.
